Gluten Free Corn Bread

Preheat in oven to 425 degrees

In a large mixing bowl combine:

  • 1 cup yellow cornmeal
  • 1 cup gluten free flour
  • 1/4 cup sugar
  • 4 tsp. baking powder 1/4 tsp. salt

Mix the above well.

In a second bowl whisk together:

  • 2 eggs
  • 1 cup milk
  • 1/4 cup shortening

Combine wet and dry ingredients.  Beat until smooth. Pour mixture into greased and floured pan. 9x9x2 pan and  bake at 425 degrees for 20-25 minutes until done.
